- Mixed Spring Greens tossed with a Champagne Vinaigrette and served with Dried Cranberries, Spicy Walnuts, Caramelized Onions and Creamy Goat Cheese Mousse
- Lobster Bisque with Brandy and Tarragon

- Prosciutto Wrapped Duck Roulade with Roasted Pears and Marsala Reduction
- Smoked Corn and Crab Ravioli with a Creole Cream Sauce
